Thank you @steemfoods for this wonderful contest. I will be giving making a post about a traditional soup Edikikong, this soup is popular amongst the eastern part of the country.

Ingredients

  • Meat
  • Stockfish
  • Periwinkle ( 2 cups)
  • Pepper (4 big balls)
  • Crayfish
  • 3 Maggi Cubes
  • Palmoil
  • Salt
  • Onions (1 ball)
  • Pumpkin leaves
  • Water leaves

Preparation

  • Wash your meat and stockfish, then put it in a pot and allow to boil. Spice it with a cube of Maggi, some onions and pepper.

  • Pick and wash the pumpkin leaf and water leaves, then put them in a tray or sieve to sip out drops of water from the vegetables. Cut the vegetables into tiny pieces and keep aside.

  • Add your crayfish, pepper and the Maggi Cubes. Also add salt to taste.

  • Pour in 3 spoonful of palmoil into your pot and allow it to boil for 1 minute.

  • Add your periwinkle to your stock. Allow to boil.

  • Pour the water leaves in your pot. Allow it to cook for a little while before you stir together with the stocks to mix well with the ingredients.

  • Finally, pour your pumpkin leaves and stir together with the mixture in the pot. Bring down your soup when it has boiled for 1 minute

Your soup is ready to be served.

Serve with Garri or Fufu
