Sri Lankan Cuisine - Traditional Polos Curry Recipe (Young Jackfruit Curry)
In Sri Lanka we call young/green jackfruit “Polos” in Sinhala. We prepare a unique vegan dish out of young/green jackfruit. It is one of my favorite dishes. Whenever we find a young jackfruit, it is a frequently made dish at our home. It is a perfect substitute for a meatless meal. If you are a vegetarian or a vegan “Polos” curry will be the best.
Polos curry is one of the traditional dishes in Sri Lanka and it’s a popular dish island wide. When the Polos curry is cooked with Sri Lankan Spices, It’s a taste which every Sri Lankan craves for. It’s a bit spicy, a bit sour and with spices it is amazingly delicious. If someone needs to try Sri Lankan cuisine, Polos curry is a must try.
Young Jackfruit is a seasonal fruit in our country and it is available anywhere. Young jackfruits are rich in vitamin A and have many health benefits. Young jackfruits are a cancer healer and helps to reduce high blood pressure.
At our home Polos curry is cooked at least once a week. My mom always says young jackfruits are fruits which do not consume any agrochemicals and fertilizers. It is 100% natural and can be found anywhere in Sri Lanka.
To start with, you should first cut the Polos into two and peel off the skin. Next step is a bit tough but if you are ready with some oil and a basket of water it won’t be a problem.
You may already know in jackfruits there is a sticky sap. In young jackfruits the sticky sap is more. If you oil your knife and hands you can get rid of these easily.
After cleaning off the sticky sap, cut it into small chunks. Wash it and you are ready to boil. You can use the pressure cooker to boil but I used the normal way. Add 2 cloves of Garcinia Cambogia to make the Polos more tender.

Ingredients
- 4 Garlic cloves minced
- 1 medium size Ginger minced
- 1 Large onion chopped
- Few sticks of Cinnamon
- 4 or 5 pods of Cardamom slightly crushed
- 3 or 4 Cloves slightly crushed
- Few black seeds
- Few Curry Leaves
- Small Pieces of Pandan leaves
- 1 tsp turmeric powder
- 2 1/2 tsp roasted curry powder
- 3 - 4 Tbsp of Oil
- 1 and half cup of thick and light coconut milk
- Salt to taste
This is a mixture made of roasted Chili powder and pepper blended together
We will be making the polos curry in a firewood hearth using an earthen dish to make it more delicious and Polos is a curry which needs to be slow cooked on a medium heat.
