How to prepare a delicious Egusi soup

Egusi soup is one of the prominent and old Igbo soups. It is one soup that is common to all Igbos. It can be used with eba, garri, semo, some people use it to eat rice but that is not a good combination for me.
List of ingredients used to cook egusi soup;

- Egusi
- Oil (palm oil)
- Locust beam
- Stock fish
- Maggi cube
- Pepper
- Salt
- Bitter leaf
- Meat or fresh fish.
Procedures;
First thing to do is to grind the egusi and locust bean with grinder. Put the stock fish in water and Cook for like 15mins so that it will be soft.
Wash the bitter leaf until all the bitterness is reduced and then boil in hot water to remove the remaining bitterness.
Now put the grinded egusi and locust bean in a plate and mix with a little oil till the particles are in uniform, then add a little water and mix. Don't add much water. Make the mixture very thick. Put the pot on for and heat until the water in it is boiled, (add it in lobules using the spoon). AFTER THAT DON'T STIR. Close the pot and Cook for 30mins. This is to allow the egusi to compact. Add the meat or fresh fish and Cook for another 15mins.
Then start adding other ingredients like pepper, salt and maggi cubes (you can add 5 cubes for 2 cups of egusi). Use your hand to seperate the stock fish into pieces, then add it to the pot. STIR THE POT.

Now you are coming to an end of your cooking.
The last thing to add is bitter leaf. After adding it Cook for another 5 to 10mins.
