How i prepared my delicious onugbu soup (bitter leaf soup) by @sovega

Today i am going to tell you how i prepared my delicious onugbu soup. It is very easy, yet tasking...all the same, still yummy.

Onugbu soup is a meal originated from the eastern part of Nigeria. Not everyone can prepare it though.

Ingredients:

  • Stockfish

  • Dryfish

  • Meat ( I used goat meat)

  • Palm kernel (you can as well use palm oil which is easier..but i like mine fresh)

  • Cocoyam (as a form of thickner...you can as well use thickner powder)

  • Ogiri

  • Bitter leaf

  • Pepper

  • Crayfish

  • Onions (optional)

  • Firstly, I boiled the palm kernel fruits and cocoyam together for about an hour till soft.

  • Then I brought it down and poundes the cocoyam to a paste, pounded the kernel fruits and then seived out the juice. Then I put them both to the boil

  • To the cocoyam and palm kernel mixture, I put in my already cooked meat, stockfish and dry fish, Ogiri, crayfish, pepper then allowed to boil till all the ingredients were combined.

  • Then i added my thoroughly washed bitter leaf soup to the boil, allowed to cook for five minutes then brought down

My parents and siblings ate it and they all wanted more😋😋

The mouth watering delicacy

This meal can be eaten with garri, akpu (fufu), wheat or any other soft meal of your choice....i heard some people eat it with rice too🤷‍♀️..whichever way, it is sumptuously good. 👍 Although if the leaves are not thoroughly washed, the soup becomes very bitter.
