আখনির পোলাও (Rice cooked in chicken stock) @shuvoprosad || 07-April-2021 || Parbatipur, Dinajpur
Hello everyone. hope you are all well. I made akhnir polaoo today. Now I am sharing the recipe to you all.
Ingredients:
- Ginger 2 inch - Roughly chopped
- Onions 3 medium sized - Roughly chopped
- Garlic 1 small - sliced in to two halves
- Cumin 1.5 tea spoon
- Fennel seeds 1 tea spoon
- Coriander 1.5 tea spoon
- Bay leaves 2 pieces
- Cardamom 5 pieces
- Cloves 8 pieces
- Cinnamon 2 sticks
- Black pepper 10 pieces
- Black cardamom 1 piece
- Star anise 1 piece
- Salt 2 tea spoon
- 1.5 kg of chicken
- 1 kg of any long grain rice
Step 1 Chicken stock
Take large pot and put all the ingredients listed above with 2 litres of water. Bring the water to a boil and cook it covered with a lid for 10 minutes in high heat. After that uncover the lid and stir it, lower the heat to a minimum and then again cook it covered for 20 minutes. After that strain it and preserve all the liquid in a clean pot and discard all the whole spices and store the chicken pieces in another pot.
Step 2 Preparing the Rice
Now wash the rice tree times and soak it in water for 20 minutes. In the mean time we will saute 2 medium sized diced onions in pan with 2 table spoons of soybean oil. When the onions become translucent add 4 cloves, 8 black peppers, 1 cinnamon stick, 4 cardamoms and 2 tea spoons of salt. Stir it occasionally until the raw smell of the spices are gone. Then add 250 gram of curd and all the chicken pieces and stir frequently. Fry in medium high heat until the chicken pieces develop colour. Then add the rice and the stock in the pan, put the lid on and let it sit untouched in low heat for 15 minutes. After that open the lid and check if the rice is cooked to our liking or not. If not close the lid and cook it for another 5 minutes.
When it is ready serve it hot and enjoy.
