SteemFoods: Kinamatisang Buwad || Cebu's Dried Fish in Tomatoes
Hello my lovelies! How have you been? I hope everything is great wherever you are today.
Today, I'm gonna share to you one of our most loved dish here in Cebu, Philippines. It's called: Kinamatisang Buwad or Dried Fish in Tomatoes. It can be served as a main dish already or as an appetizer.
Since our country is comprised of thousands of islands, one of the main source of livelihood is fishing. Tons of fresh fish are sold in the wet market everyday. And some of the fresh catch of our dear fishermen were also sundried into delicacies we call buwad or dried fish. In Cebu, we have the Bantayan Island as the main source or supplier of our dried fish. The dried fish which I used for my dish came all the way from Palawan, these are catched by our dear fishermen from Olango Island who travelled all the way to Palawan which is a very rich place when it comes to marine life. It's a dried katambak or snapper.
So for today, allow me to share my simple recipe of Kinamatisang Buwad which I cooked for breakfast today. The ingredients that I used are the following:
1 piece of dried buwad katambak or snapper
4 pieces tomatoes, sliced
4 cloves of garlic, minced
1 piece onion, chopped
4 pieces of small white chillies
Chilli leaves for garnish
Here's how I prepared it:
Step 1: Wash and slice the tomatoes, garlic, onion and chilli leaves.
Step 2: Wash the buwad or dried fish to soften its flesh and to remove excess salt. I sliced the fish into half since I only have a small pan at home to easily fry it.
Step 3: Fry the dried fish. Set aside in a plate.
Step 4: On the same pan, sauté garlic and onion. Throw in tomatoes until it caramelizes. Add in white chillies for added spiciness.
Step 5: Throw back in the fried dried fish into the sautéed tomatoes. Allow both sides to soak in the sauce.
Step 6: Serve with some chilli leaves.
And voila! My Kinamatisang Buwad is done! Manga-on ta! Let's eat!
