SteemFoods: Binignit nga Kolo || Breadfruit in Coconut Milk

Today, I'm going to share with you a snack recipe in Cebu which is prepared using four ingredients only. This creamy snack is called Binignit nga Kolo. It's boiled ripe breadfruit with coconut milk and brown sugar. It is also called in Tagalog as Minatamis na Rimas.
Time Magazine and National Geographic have featured breadfruit in articles because of its potential to alleviate world hunger. Other headlines have dubbed breadfruit as “the Food of the Future,” quickly spreading its “super food” status to the masses. Though it is a fruit, breadfruit is characteristically less like a fruit and more like a potato. If the “bread” part of its name conjured ideas of carbohydrates, well you wouldn’t be wrong. Breadfruit is a starchy, carbohydrate fruit equivalent to staple field crops such as rice, maize, potatoes, and sweet potatoes. Breadfruit is high in carbohydrates and a good source of antioxidants, calcium, carotenoids, copper, dietary fiber, energy, iron, magnesium, niacin, omega 3, omega 6, phosphorus, potassium, protein, thiamine, vitamin A and vitamin C.
Here are the ingredients I used in cooking my version of Binignit nga Kolo:
2 pieces ripe kolo/breadfruit, sliced (approximately 4-5 kilos)
3 pieces coconut, grated
1 kilo brown sugar
4 cups water for first extraction of coconut milk, 4 cups water for second extraction of coconut milk & 8 cups water for additional liquid
THE COOKING PROCESS
- Prepare the ingredients.
- Open the coconut and grate them. (I used the coconut we planted at the back of our house.)
- Slice the breadfruit into small pieces.
- Extract coconut milk. Add 4 cups of water to grated coconut for first extraction, set this aside because you're going to add this last, a few minutes just before your dish is done. Add another 4 cups of water for second extraction, you will add this first in your pot with the breadfruit.

- In a large pot, place your sliced breadfruit. Add the second extraction of your coconut milk with additional 8 cups of water. Let it boil. Stir it occasionally.
- Once it gets to a rolling boil, add the brown sugar and give it a good stir.
- Add the first extraction of coconut milk to your breadfruit, a few minutes before removing your pot from the fire.
And voila!!! Our Binignit nga Kolo is ready to serve. Tara kain tayo. Let's eat everyone!!!
