Good morning ma. The sweetness of chips is felt when it is crunchy. There are two ways to achieve this, if u fry without drying you would have to fry for long for the water to be extracted in the fire which will make you fry for long and would lead to burning of your chips. Most times when you fry like that it won't dry, it will just be like frying the Irish Potatoes normally.
