Achara soup

Achara soup is mainly ngwa native soup, it is prepared with achara leaf ( elephant grass). The soup goes well with ukazi leaf with other ingredients.

I will be telling you the processes and ingredients required for the food.
Let talk about the ingredients in details

INGREDIENTS

Achara leaf .......... 5kg
Ukazi leaf .............1/2 kg
Egusi ( melon) ........ 2cups
Achi ...,....................1/4 cup
Periwinkle (esam)................ 2cups
Salt,......,............,.............1 teaspoon
Maggi ..............................1 cube
Pepper as much as you can consume
Fresh meat... Quantity you desire
Fresh fish........ quantity you desire
Red oil ...................6teaspoons
Snail ..,................ quantity you desire

Now let go down to the preparation in details

PREPARATION.

Firstly wash all the meats and fishes put in a very neat pot add salt and Maggi. Cover it to boil for 5minutes.

ADD RED OIL

Allow it to boil together for like 3 minutes and continue cooking.

ACHI

Achi helps to thicken the soup so that it won't reach your elbow so fast. It is very necessary for this soup.

EGUSI ( MELON)

This is also a thicken and it have it own taste, even the colour of the soup changes as soon as you add egusi.allow it to boil for 2 minutes.

ACHARA LEAF

This is gotten from a natural leaf but you will have to extract it from the stem.

KPOMU

This is also known as canda gotten from the skin of a cow. It also serves as meat but it is sliced sometimes to garnish the food.
IMG_20210522_160529_608.jpg cover the pot so that ingredients added will stir together for 2-3 minutes. Then add your esam and the leafs, here I have ukazi and uziza as my leaf not vegetables.

The soup is now very read, but you need to turn the soup so that all the ingredients will go round not sticking one side. Just like this
