Intro



"Olivier Salad", or differently "Russian Salad" is known in most of the places around the world but I have noticed that the ingredients varies a bit between the countries. I have decided to share with you the version I am preparing at home. I hope you will enjoy that cheap and tasty meal which perfectly works as the breakfast, part of the lunch or one of the plates on the party.

Ingredients:


🥗 4 potatoes
🥗 3 carrots
🥗 1 apple
🥗 1/2 of the onion
🥗 4 pickles
🥗 4 eggs
🥗 Can of the peas
🥗 Parsley (perfectly if you have a root, but leaves will work too)
🥗 Mayonnaise, salt and pepper


Preparation:



1️⃣ Boil the eggs, remove the shell and leave it to cool


2️⃣ Peel the potatoes and chop it for the small cubes. The cubes should be all the same size


3️⃣ Clean the carrot, you can peel it (although I am not doing it when carrots are organic - most of the vitamins are right under the skin). Chop it into small cubes - exactly the same size of the cubes of potatoes.


4️⃣ Boil the potatoes and carrots in a salted water. Drain it and leave to cool down.


5️⃣ Now chop the onions. Here the cubes should be as small as you can make it, so don't try to keep it same size as other vegetables and spend some extra time in chopping it well.


6️⃣ Peel the apple, remove the seeds and chop into cubes as well. In some countries apple is not used as one of the ingredients but I like to add it to make the taste more rich.
Perfect will be slightly sour green apple but you can try also prepare the meal with the sweet kinds.


7️⃣ Now the pickles. I was using in Poland fermented polish cucumbers but as it's not available in some places, it can be replaced with the regular pickles in vinagre. Chop it into small cubes, approximately same size as apple, half of the size of potatoes and carrots.


8️⃣ If you have a parsley root, peel it, boil and chop into small cubes. Using the root is the best and the tastiest way, but unfortunately in Argentina, where I live now, it's totally unknown so I have to use the leaves instead. Leaves works too, but the taste is slightly different, less attractive in that meal.


9️⃣ Mix in a bowl all the ingredients: eggs, pickles, parsley, potatoes, carrots, onion and apple


1️⃣0️⃣ Add the mayonnaise in an amount which satisfies you. More mayo means more smooth consistence and definitely better taste but also more calories, so it's your choice. Use the salt and pepper, mix once again.


1️⃣1️⃣ Serve immediately with the bread or keep it in the fridge for up to two days (if you use home made mayo, only to 12 hours).
