Healthy stewed chicken with avocado-brie salad

Intro


Hello everyone,
Today I'll present you very simple, although delicious and healthy lunch. All the ingredients should be available in every country. But I am trying to include in the description information what can you use instead, just in case you can't find it in your market.


Ingredients (4 plates):


🐔 800g of chicken breast
🐔1 kg of potatoes
🐔 80 g of Brie cheese
🐔 2 avocados
🐔 Bunch of Rucola
🐔 1 onion
🐔 200g of cherry tomatoes
🐔 Parsley
🐔Olive oil
🐔 two spoons of flour
🐔 1 liter of chicken broth
🐔 Salt, pepper, bay leaves your favourite spices


Preparation:


1️⃣ We will start with the salad. Prepare some big bowl. Clean well rucola and put it in the bowl. If you don't have rucola, you can use salad, watercress or spinach instead.


2️⃣ Clean cherry tomatoes, cut it into halves and add it to the bowl with rucola. If you don't have cherry tomatoes, you may use any other tomato, but remember to cut it into small pieces.


3️⃣ Cut into a half avocados, remove the seed and take off the avocado from the shell using spoon. Cut it into cubes and add to the salad.


4️⃣ Cut the brie cheese into small cubes and add to the salad. Instead of Brie you may use mozarella from the water. You can also use blue cheese but the salad will be have much stronger taste.


5️⃣ Add few spoons of olive oil, salt and pepper and mix everything well. Salad is ready. Put it in the fridge.

Next we will prepare potatoes.


6️⃣ Peel the potatoes, clean them well, chop into average size cubes and boil in the salted water until it's soft.
Remember that using the pot cover will fasten the cooking process.


7️⃣ While potatoes are cooking, chop the onion into tiny cubes. Crying is allowed.


8️⃣ Cut the chicken breast for thin filetes and add spices you like. I use salt, pepper, mix of the spices for empanadas and Umami, but you are allowed to add whatever you like.


9️⃣ Fry on the oil chicken from both sides. It should be a bit brown from outside but still raw inside. That way the "burn" from chicken will allow us to create the great base for the sauce.


1️⃣0️⃣ Remove chicken and on the same pan, same oil, fry the onion until it will become slightly brown


1️⃣1️⃣ Add to the onion the chicken breasts and bay leaves and cover everything in chicken stew. Stew everything in chicken broth for 15 minutes. Then add two spoons of the flour to thicken it.



Serve hot, with potatoes covered in sauce.
