Candied orange peel is delicious addition to desserts. You can use it in the cakes, as the sprinkle for the ice cream or yoghurt based meals. Its original taste is sweet and sour with a bit of bitter.

I recommend you to make more tiny jars with that marvelous product. When it's kept in cool and dark place, it can last even for a year, so it shouldn't be any problem. In the winter you can keep it on a shelf, in the summer I recommend to move it to the cellar or fridge.

The best oranges to prepare candied peel are oranges from your own garden or ecologic farm. Avoid fruits which were treated with pesticides. If you are not sure if fruit is ecological, clean it very well before.

Ingredients (4 small jars):

🟢 2 kg of oranges
🟢 2 cups of sugar
🟢 2 cups of water

How to prepare the peel:

Clean very well the oranges and cut it on halves.



2️⃣

Squeeze the oranges to get the juice. You can keep it in the fridge up to 3 days. Juice is not needed to prepare candied peel, but it would be a big lost to not use whole fruit. If you don't like the orange juice, you can just eat the fruit.

Remove white part from the peel. Take your time to do it very carefully. If you will leave too much white skin in your oranges, it will be very bitter.
Notice how does correctly peeled skin look like on the photo. You can see very little of white and kind of pores (orange dots)

Chop the skin into small slices. I always cut it into the stripes and then little cube. When you cut it into the stripes, you have last chance to find and remove some spots with too much white skin.

Boil the skin in a water for approx 15 minutes. After that time remove all the water, add 2 cups of sugar and 2 cups of fresh, cold water. Boil everything together for 30-40 minutes. Half of the water should evaporate and orange skin should look more shiny, transparent-like

Put hot peel into the jars and cover it with the syrup from the boiling. Close the jars very well and pasteurize for 10-15 minutes. After that time put the jars upside down in the towel until it will cool down.
