Sardines and Vegetables Spaghetti Recipe.
Good morning dear friends, I'm Stephen from Nigeria. Today I'll be sharing with you a recipe for spaghetti with a twist to the traditional ways of preparing pasta. Spaghetti is a very common meal in Nigeria but truth be told, it found its way into our daily menu via introduction by the westerners and the Italians to be precise.
Pasta is a traditional Italian dish which we adopted here in Africa. A major traditional practice of cooking pasta the Italian or Western way is the inclusion of modest quantities of tomatoes but today I did mine differently by completely substituting tomatoes with fresh green veggies and surprisingly it came out awesomely delicious. Traditionally pasta cooked in a tomatoes based sauce comes out a rich reddish hue but mine cooked with green veggies came out a golden green colour.
I'll start by listing my ingredients then I'll take us through the methods.
INGREDIENTS
1 pack 400g durum wheat spaghetti
2 cans of 250g canned sardines
1cup baby carrots, 5 green chilli peppers, 3 Spring onions and a sachet/1tbs of fried rice spice
1 cube Maggi star chicken stock cube
1cooking spoon vegetable oil, 1 small onion, 1tbs curry powder and 1/2tbs salt
METHOD
STEP 1
I started with boiling my spaghetti Al dente for 5 minutes in hot water.
After 5 minutes I removed from the pot of hot water and put in a sieve to drain. Next I washed my green veggies and carrots and finely chopped them up.
STEP 2
I opened up my sardines and put them in a clean bowl.
Next I put a clean pot on fire and poured in a cooking spoon full of vegetable oil. I heated it up and poured in a small bulb of finely chopped onion.
I fried the onions until it was caramelized then I added the canned sardines.
Next I added my curry powder.
I added the fried rice spice.
I added the stock cube and gave a gentle stirr so I don't disintegrate the cooking sardines.
I put a pot cover and allowed it simmer on low heat for 2 minutes.
STEP 3
I opened the pot after 2 minutes then added my spaghetti.
Next I added my chopped vegetables then I sprinkled a cooking spoon of tap water, I gave a gentle stirr and replaced the pot cover. I allowed it simmer on low heat for 3 minutes.
After 3 minutes my pasta was ready. I turned off the heat and it looked like this in my pot.
I served some in my plate and took the photograph above.
