Sardine Omelette and Fried Ripe Plantains (Dodo)| Recipe:100% Power Up.
Good morning dear friends, Im Stephen from Nigeria. Today I prepared for my breakfast Sardine Omelette and Fried Ripe Plantains(fondly called Dodo in Nigeria), and I'll love to share with you my recipe. To start with I'll list my ingredients then I'll take you through my method.
INGREDIENTS
2 cans of 300g sardines
7 raw chicken eggs
5 tomatoes, 3 scotch bonnet chilli peppers and 2 large onions finely chopped.
A bunch of 6 ripe plantains
Two packs of 200ml vegetable oil for frying.
A little salt and seasoning as desired.
METHOD
STEP 1
I cracked my eggs and placed in a bowl, then I opened up my cans of sardines and added to the cracked eggs.
STEP 2
I added my finely chopped up tomatoes, peppers and onions to the sardine and egg mixture then I whisked up the ingredients with a dinning fork.
STEP 4
I set aside the whisked sardine, eggs and vegetables then went to work peeling off the skins of my washed ripe plantains.
I took a sharp kitchen knife then sliced them up into tiny bits of flat oblong shapes.
STEP 5
I added salt and seasoning to my whisked ingredients then I poured two table spoon full of cooking oil in a shallow pot.
I heated it up then fried my omelette.
After two minutes I flipped it up and fried the other side for two minutes. I took it off the fire and set it aside.
STEP 6
I put a shallow pot on fire, I poured 200ml vegetable oil and fried up my plantains for three minutes on each side until they were brown on the outside.
I turned off the heat and placed my plantains in a tissue lined sieve to drain excess oil.
I served my sardine omelette in a plate and placed the fried ripe plantains around it before taking the picture I used in my title page.
