*MY CURFEW TIME MEAL(BLANCHED VEGETABLES AND BOILED RIPE PLANTAINS*

Good morning friends, I hope you all slept well. I'm Stephen and I'm from Nigeria, we've been having some restive situation that necessitated a 48hour curfew. I really craved a rice dish this morning but I had to obey the curfew and
make do with what I have in my pantry. I prepared blanched vegetable sauce and boiled ripe plantains and a hard boiled egg. I started out by putting my ingredients together.

150g finely chopped pumpkin leaves, 50grams finely chopped lemon basil, 1 small onion finely chopped and 6 medium heat tiny finger chilli peppers, finely chopped.

I also set aside about 100ml red palm oil and 1 stock cube.

I heated my pan on the stove and poured in the red palm oil,

I allowed a few minutes to bleach it a little without making it lose it's original flavour, then I added my onions and fried for 2 minutes.

Next I added my chili peppers, salt to taste and my stock cube. I stirred to mix up thoroughly and next I added my lemon basil

and lastly I added my pumpkin leaves. I stirred once more and put on the lid. I allowed it to simmer on low heat for five minutes and turned off the heat. I boiled some ripe plantains and one chicken egg, served in my plate and had a humble but delectable breakfast while observing curfew.
