Arabic Food KABSA
Hello, food lover!
Kabsa is the basic food for my employer during Suhor - the meal before the sunrise. This is a kind of heavy meal which is being serve during lunchtime in ordinary days.
Since this month is Ramadan, I been cooking and serve before the sunrises. Please, try to observe the spices which are so beneficial to our health.
How to cook Kabsa?
Ingredients:
I kilo chicken(chopped)
5 cups basmati rice
Cumin powder
Coriander powder
Cinnamon stick
Cardamom
turmeric
Bay leaves
Black pepper
Salt to taste and oil
1 Garlic
3 big Onions
I potato
I carrots
Cloves
3 tomatoes
Tomato paste
Preparation:
- Wash the chicken with lemon.
- Heat a casserole or pressure cooker.
- Add the chicken.
- Add onions, garlic, bayleaves, cinnamon stick, cardamom and cloves.
- Add the chicken, simmer, add salt.
- Add tomatoes, stirring occasionally and cover for a while. No water added until the chicken is already half cooked with the spices itself.
- Add all powdered spices
- Add water and salt for final tasting.
- Add the tomato paste.
- After 15 minutes, add the sliced potato and carrots.
- Add the pre soaked rice.
- Cover for 10 minutes with the lowest heating temperature.
Done!
Final touch! Ready to serve . I am so happy to serve the people who are fasting for the Ramadan. Respect their culture and tradition. The Holiness of the Ramadan that I been observed for 23 years. I served them with foods they want . There are so many kind of delicious food aside from this recipe. My employer don't allow me to take a picture the whole setting . Anyway, they are also eating on the floor and not on the table. Eating while sitting down on the floor is a big respect to God/Allah who give all the blessings/food and water .
