Today, I would love to share a special recipe with everyone here. I have always enjoyed eating yam right from childhood. I was nicknamed (Oil yam) because I could eat yam at any time and any how it’s made 😄😄.
Yam is a staple food in my Country Nigeria. There is no season without yams except that they’re a bit scarce during the farming seasons and a bit expensive too but very sweet compared to other seasons.
There are different types of yam recipes in my country but there is one that is not too considered probably because it’s a bit time consuming compared to other recipes but it’s another fun way to eat Yam for me.
This rare recipe is Stuffed Yam Balls.
My INGREDIENTS include;
For Cooking my yam
- Yam
- Water
- Salt
For coating
- 1/2 cup of Flour
- An egg
- Dried and blended chili
For stuffing
- Spring Onions
- Two tomatoes
- Pepper
- Carrot
- Titus fish
- Green beans
- One Maggie cube
AND
OIL FOR FRYING
PROCEDURES
- I Slice and peel the skin off the yam, place in the pot and cook for about 15 minutes or till it’s cooked.
- I then put them in a clean mortar and pound till it’s smooth and stretchy and set aside.
- I cut, wash and steem the Titus fish for 10 minutes, set down to cool and use my spoon to break them. Please, don’t forget to remove the bones.
- Then I chop all the vegetables and set aside too.
- Now, I set my frying pan on fire to heat up, I add about three tablespoons of oil and add the vegetables and steamed fish, Maggie and salt to taste and stir fry them for about seven minutes. I turn off the heat and let it cool.
- I get two separate bowls and break and whisk the egg and set aside.
In the other bowl, I mix the flour and dried chili and set aside.
- I then scoop the yam little by little and flatten them separately on I tray.
- I scoop the filling, add them on the flattened yam dough and roll them into balls.
- I set my frying oil on the burner to heat up and then take them alternatively and roll in the egg and flour and fry in the oil.
And here’s my stuffed yam balls. Another delicious way I Snack and enjoy my yam.
