Cooking For My Mother's 65th Birthday: Lechon Paksiw, Native Chicken Soup and Pancit
Greetings of good health and prosperity friends and fellow steemians!
Our mothers are simply the best person in the whole wide world. They nurture us with love, caress and endures all sacrifices for our own good. Today, I will honor my mother on her 65th birthday by doing a simple celebration and cooking her some of the authentic Filipino dish for this special occasion. I will share to you my simple dish of lechon paksiw, we chicken native soup and pancit.
1 and 1/2 kilograms of lechon
Smashed garlic 🧄
Two pieces of red onions sliced
1 teaspoon of peppercorn, 5 pieces bay leaves, 4 pieces star anise, asusinas, 4 tablespoon of brown sugar and magic sarap seasoning.
1/4 cup of soy sauce
1/4 cup of vinegar
5 cups of water
Cooking Procedure:
Step 1: In a pot place the lechon and add all the ingredients and spices.
Step 2: Add the 1/4 cup of vinegar and soy sauce. Add the 5 cups of water.
Step 3: Place the pot in a low fire and allow it boil.
Step 4: When it is boiling, add the brown sugar and season with salt and pepper to taste.
Native Chicken Soup
Here are the ingredients
1 whole native chicken meat, cut into desired sized
Ginger and red onion sliced
1 piece chayote cut into desired sized
Cabbage sliced into desired sized
8 cups of water
Native Chicken Soup Cooking Procedure
Step 1: Place the native chicken meat in a pot, saute with ginger and red onion for 3 minutes
Step 2: After three minutes, add the eight cups of water and let it boil.
Step 3: Check if the meat is already tinder. Add the chayote and let it boil.
Step 4: Add the cabbage. Add salt and pepper to taste.
Birthday Pancit
Here are the ingredients:
One kilogram of pancit
Sliced lechon
Garlic
Red onion
Sliced cabbage
Sliced carrots
Procedure in Cooking Birthday Pancit
Step 1: In pre-heat pan add cooking oil and saute the garlic and red onion for 30 seconds.
Step 2: Add the lechon, and saute it for another 30 seconds.
Step 3: Add the carrots and let it tinder. Then add two cups of water
Step 4: Add soy sauce to have a good color and let it boil.
Step 5: Add the cabbage.
Step 6: Add the pancit and cooked it for a minute. Season to taste and served.
