VEGETABLE VINAGRET TO SHARE WITH THE FAMILY //@moraok
HELLO HELLO FRIENDS OF @SteemFoods. I am very excited to make this first publication within this great anvaluable community.
Today I want to show you how to prepare some vegetables in the vinaigrette, they are ideal to share on any occasion to satisfy any craving and not have to regret consuming unnecessary calories that can modify our weight. I like to prepare these vegetables when they are in season and they are obtained very fresh in the market, they also keep for a long time in the fridge, up to three months, you can eat them with bread, cookies or another companion of your choice, here in Venezuela too We accompany it with cassava, it is a type of crunchy biscuit made from cassava flour.
They are ideal to share pleasant moments with the family. I prepare this recipe on occasions of birthday parties, they are spectacular and they like them a lot. It is simple and easy to prepare, it is also very economical and profitable.
Let's see how to prepare it.
- 3 Zucchini
- 4 Eggplants
- 3 bell peppers
- 3 Chayota
- 4 heads of Garlic
- 1 branch of coriander
- 1 branch of Parsley
- 1 cup of vinegar
- 1 cup of olive oil
- 4 tablespoons of Salt
1.We start by chopping all the vegetables into squares, this can vary according to your taste.
2.Something important that we must do with the eggplant once it is chopped is to place it in salty water for a few minutes before cooking.
3.Place a pot with water to boil, once the water is boiling add the cup of vinegar and salt and wait for the salt to dissolve in the solution
4.The vegetables are cooked in the water with vinegar one by one and after an approximate time of 5 minutes we are extracting the vegetable from the pot with the help of a strainer and we take it to a bowl.
5.Once all the vegetables in the bowl are mixed, the crushed garlic is added together with the finely chopped parsley and coriander and the olive oil, this time, I tried adding a cup of the water with vinegar that remains from cooking, this it allowed me to decrease the amount of olive oil that I used on other occasions.
6.Now this preparation is ready for packaging, it is left to cool and then refrigerate.Now to taste these delicious, nutritious and healthy vegetables.
