Korean JAPCHAE (GLASS NOODLE STIR FRY with Beef)

Today I am sharing my favourite lazy version of Japchae. It is a Korean dish made of starchy sweet noodles (called Danmyong in Korean), stir fried with sesame oil with various vegetables. Normally the dish includes thinly sliced ​​carrots, onions, spinach, mushrooms. Most common japchae is served with beef marinated in soy sauce and sugar, garlic. This delicious dish can be served hot or cold which makes it perfect for parties and festivities. We normally served it as a main course or side dish.

Ingredients

• 150 gr beef tenderloin

• shiitke mushrooms, dried

• 2 cloves garlic, minced

• 3 tbsp. sugar

• 2 tbsp. soy sauce

• 2 tbsp. Sesame oil

• 1 tbsp. sesame seeds toasted

• 100 g spinach

• 150 g Korean noodles

• green leek

• 1 chopped onion

• chopped carrots

• 1/2 bell pepper red

• salt and black pepper

• vegetable oil

STEP1

Marinate 100 grams of beef tenderloin with 2 cloves garlic, soy sauce. And leave to marinate for an hour. In the meantime, we can prepare vegetables.

STEP2
Peel the vegetables. Cut the onion into thin half-rings, chop the cuxumbers into stripes. Cut carrots and bell peppers into thin strips.

STEP3
Heat a bit of vegetable oil and soak dried mushrooms with boiled water

Step4
After the meat changed a bit of color add carrots. Let the carrots fry for several minutes. Then add bell peppers and continue to fry . Normally, you must stir fry each vegetable separately but in my lazy version I mixed all in one pan.

Step5
Add soaked dried mushrooms but remove all the liquid first. After that you can add spinach.

STEP6
Add sesame oil and soy sauce and fry until spinach get soft. Then add green leek and turn of the heat.

STEP7
Let's prepare the noodles. Boil them according the instructions on the package. Then rinse with cold water and cut with scissors.

STEP8
Mix noodles with vegetables and season according to your taste. You can add more sesame oil, soy sauce, salt and pepper.

I haven't tried cooking that myself though. It's just when I go dine in a Korean restaurant...
