Ofe akwu /Nigerian native stew / promoting African traditional dishes / 24/4/2021

I would love to talk about my native Nigerian stew, "ofeakwu" .
Ofeakwu is one of the local dishes known in the eastern Nigeria commonly amongst the igbo. Most people call it banga soup while others call it ofeakwu.
I grew up to know it as ofeakwu as everyone around me called it, it's in my adulthood I came to know the name banga soup and it sounds cool to me .
Ofeakwu is not an occasional dish, it's mainly cooked in homes and most times for commercial businesses in local restaurants. This is because it's not highly demanding like the normal tomatoes stew everybody knows. There's usually little or no demand for ofeakwu in the public .
Ofeakwu is usually eaten with boiled white rice, beans or agidi. It can be eaten with anything depending on people's choice of food combo .
It is very proteinous and should be combined with the right food to blend the food mixture
Recipes for ofeakwu
- akwu (palm fruits)
- meat
- dry fish
- stock fish
- fresh tomatoes
- ogiri okpei
- ginger (optional)
- garlic (optional)
- onion
- maggi
- crayfish
- salt
- Pepper
- basil leave also known as scent leave (vegetable)
my ingredients
procedure for preparation
wash and cook the akwu (palm fruits) to get soft
carefully extract the palm fruits in a mortar with a pistle not allowing the kernels to break by applying the pistle on the palm fruits continously until the fruits are separated from the kernels
you can use your hand to separate them if the palm fruits is small
wash meat, stock fish and dry fish (if any ) and pre cook
extract the oil from the palm fruits using water and sieve out the chaff
pour the extracted oil water in a pot and add salt to taste, allow to boil for about 5mins
Add the already precooked meat, stock fish and dry fish and allow to boil
Add onions, fresh tomatoes and maggi
Add the blended ginger and garlic, pepper and cray fish, ogiri okpei and allow to cook very well
Wash and chop the vegetable
- Add the vegetable and stir very well
- put off the heat and allow to cool
- Your ofeakwu is ready 😋
You can serve with boiled white rice or any other carbohydrate food of your choice to blend with the protenous ofeakwu.
