Dumplings

Today I am preparing a very familiar dish for Ukraine - dumplings. This is a tasty and very filling dish. It is prepared as a daily dish and is never served at the festive table. However, dumplings are the perfect way to feed the whole family.

To prepare the dish, I need the following ingredients:

  • Pork - 500 gr.
  • Veal - 500 gr.
  • Onion - 4 pcs.
  • Eggs - 2 pcs.
  • Wheat flour - 800 gr.
  • Salt - 5 teaspoons
  • Sugar - 1 teaspoon
  • Sunflower oil - 100 ml.
  • Salt and pepper - to taste.

First, I sift the flour into a separate bowl. In this bowl with flour, we beat the eggs and add salt to taste. I use up to 1 tablespoon of salt. Then I add about 100-200ml of hot water. Depending on the type of flour, the amount of water may vary, so if you add more water, but the consistency is as it should be, then you did everything right. Also, we need to add 1 teaspoon of sugar.

Now I knead the dough. The dough should not stick to your hands, but it should not be tight either.

Now I prepare the filling. Through a meat grinder, I twist the meat and onions, add salt and pepper to taste. The mince should be slightly oversalted, as the meat will lose some salt during cooking.

My daughter helped me roll out one thin sheet of dough.

With the help of a glass, I cut out circles from the dough. I put a ball of minced meat on each circle. It is important that the minced meat does not fall on the places where the dumplings are molded, otherwise the dough will not come together and the dumplings will boil in the water.

Now you need to mold each dumpling. This should be done so that they come out with a characteristic shape.

In order to cook dumplings, you need to first boil water and throw dumplings into boiling water. After the dumplings have floated, cook them for 7-10 minutes. Add a bay leaf, a tablespoon of salt, and sunflower oil to the water. In this way, dumplings will get a smell, taste, and will not stick together.

When the dumplings are cooked, we take them out of the water using a special mesh ladle. I grease the finished dumplings with melted butter.
