Saute chicken with vegetables looking for a better health

We always think of vegetables as part of of a good health, but nowdays the soils are not producing food as it used to be many years ago. Scientists think that there many factors that can produce this problem. One of the big problem we have is in the treatment of soils. Farmers have to avoid the soil erosion to minimize the loss and degradation of the soils, practice of shift of crops to improve the quality of the soils, the rational use of chemical fertilizers, and the use of rest of vegetables of the harvests as a natural way of a natural fertilization.

Nowdays, doctors tell us to drink vitamin tablets to complement the intake of nutrients and improve our health because our daily diets are very poor . I have proved that. When I consume vitamins I feel better because they contain quantities of minerals and vitamins we don't find in our daily diet. I thought that may be we can diminish that problem incorporating a variety of vegetables, fruits, cereals, seeds and legumes in our daily meals as much as we can do it. When we eat well we reduce the visits to the doctor.

Today I decided to prepare this meal to my family considering that we have to eat well and good food to strengthen our immune system. When vegetables are fresh they cook very quickly and I like to steam cook them. This dish is easy, tasteful and economical when you harvest your own production of vegetables.

To prepare the chicken we need:

  • 1 chicken breast cut in small pieces without bones
  • 1 or 2 small carrots
  • 6 green beans
  • 1 bunch of cibulet cut finely
  • 2 garlic cloves
  • 1/2 red pepper
  • 2 chilies
  • small piece of ginger
  • 2 tablespoon of soy sauce
  • salt at taste
  • olive oil

Preparation

  • cut the chicken
  • soak it in the soy sauce and garlic
  • cut the cibulet, garlics, chillies in small pieces, and cut the red pepper in strips
  • cut carrots in thin strips
  • cut the green beans as you desire

  • place a saucepan on the fire and add some olive oil
  • add the cibulet, garlic, chillies and pepper
  • saute them quickly, please don't let them burn because they will get bitter

  • add the soaked chicken in the saucepan and cook for 5 minutes

  • then add the green beans and the carrots and cover with the lid
  • let it cook for about 12 minutes until they are tender but not too soggy

As a garnish I prepare steamed cauliflower bathed with olive oil and parsley leaves.

I also prepare a salad made with:

  • fennel cut in thin slices
  • slices of onion
  • slices of tomatoes
  • 1 garlic clove
  • vinegar
  • olive oil
  • salt at taste
