HOW TO PREPARE CURRIED CHICKPEA WITH PRAWNS
Good day lovely people of Steemit and Steemfoods community!
Today's featured dish is perfect for all pescatarian out there. The dish is a curried chickpea, fresh tiger prawns, tomatoes, cucumber, green peas, and coconut milk. This dish is not only delicious and savoury, it is also nutrient packed.
This recipe is inspired by the time I was trying to experiment with different types of diets. There is also a vegan version of dish which is exactly similar to the one I will be showing you but without the prawns but who doesn't love prawns? So we're adding them today. Let's get started!
HERE ARE THE INGREDIENTS IN MAKING CURRIED CHICKPEA WITH PRAWNS:
400 grams medium size Prawns, deveined
1 can Chickpeas, 240g
1 pack Green Peas, 100g
2 pieces Large size Cucumber
1/2 cup Coconut milk
3 cloves Garlic, chop
1 medium size White Onion
2 pieces medium size Tomatoes, chop
1 1/2 tablespoon Parsley, finely chop
1 tablespoon Curry powder
1/2 teaspoon Chili powder
2 pinches teaspoon Ground black pepper
1/4 teaspoon Salt
PROCEDURE:
STEP 1: To prepare the prawns, start by removing the head
STEP 2: Using scissors, cut the top part of the shell while leaving the tail intact. Remove the intestine.
STEP 3: Wash prawns in running water and then drain.
STEP 4: Season prawns with salt and pepper. Set aside.
STEP 5: Peel 1 cucumber and dice. Set aside. We will only use half the amount.
STEP 7: Using another cucumber, cut it in half and scrape the cucumber flesh out. This will be used for our presentation. Set aside.
STEP 8: Finely chop parsley leaves. Set aside.
STEP 9: Chop onions into cubes. Set aside.
STEP 10: Chop tomatoes into cubes. Set aside.
STEP 11: Chop 3 cloves garlic. Set aside.
STEP 12: Saute onions and tomatoes for 30 seconds over medium heat then add in garlic and saute for another 1 minute.
STEP 13: Add prawns then saute for 1 minute.
STEP 14: Season prawns with curry powder, chili powder and salt then pour in coconut milk. Cook for 2 minutes.
STEP 15: Add in cucumbers, parsley, followed by chickpeas and green peas. Stir and cook for another 2 minutes in high heat until the sauce thickens.
STEP 16: Transfer to our prepared hollowed cucumber and serve.
This recipe can yeild 3-5 person. Best serve with rice.
