Filipino Boiled Pork Soup-Nilagang Baboy

Maybe some of you are already familiar with this recipe but I just like to post on this community our lunch today.

It was cold and raining when I woke up this morning so I had the idea to make a hearty soup that is easy to make and at the same time full of nutrients. I went to the shop and found the perfect cut of pork shoulders with bones attached so I decided to make Nilagang Baboy which translates to Boiled Pork Soup.

The bones make the soup more flavourful and it is also affordable. The soup consists of pork, chayote, corn, plantain, and cabbage or may opt to use bok choy or wombok. The method is simple, you just boil the ingredients in different stages, creating layers upon layers of flavors to create the perfect dish for the cold weather.

Many cuisines also have their own version of boiled meat and vegetable soup but today we are featuring something all Filipinos love to eat on a rainy day, Nilagang Baboy.

LET'S TAKE A LOOK AT THE INGREDIENTS NEEDED AND HOW TO COOK THEM

1.2kg Pork Shoulder (cut into serving pieces)
150g Squash
150g Chayote
150g Taro
200g Cabbage
3pcs Plantain
4pcs String Beans
5pcs Fresh Young Corn
3pcs Chili Finger
1pc or 30g Ginger
1 large White Onion
2pcs Scallion
1 tablespoon Silver Swan Fish Sauce
Half teaspoon Crushed Pepper Seeds
1pc Knorr Chicken Cube
1 tablespoon Salt
2ltr Water

INSTRUCTIONS:

STEP 1. Wash and clean pork and vegetables in running water. Set aside.

STEP 2. On a chopping board, cut vegetables as shown in the pictures.

STEP 3. Meanwhile, place pork on a large pot filled with water then add taro, squash, ginger, onions, scallions and chili finger.

STEP 4. Season with Silver Swan fish sauce, Knorr chicken cube, crushed pepper, and salt.

STEP 5. In a stovetop, cover and simmer on a low heat for 1 hour until pork is tender.

STEP 6. Once the pork is tender, stir in chayote, string beans, corn and plantain. Cover and simmer again for another 10 minutes.

STEP 7 After 10 minutes turn of off the heat and add the cabbage. Transfer in large serving bowl and serve.

This heartwarming recipe can yield for 6 person. Best serve with steamed rice.
