Pan de Jamón Venezolano / Venezuelan Ham Bread
Today I share with you a delicious dish that is part of the Christmas Dinner of my beloved country Venezuela, it is the "Pan de Jamón Venezolano".
Ingredientes // Ingredients
5 Eggs
4 tablespoons of sugar
1 teaspoon of salt
100 grams of butter
1 cup of milk
1 cup of water
25 grams of yeast
1 kg of Bacon
1 Kg of Ham
Olives
500 grams of sultanas
Molasses
5 Huevos
4 cucharadas de azucar
1 cucharadita de sal
100 gramos de mantequilla
1 Taza de Leche
1 Taza de agua
25 gramos de levadura
1 kg de Tocineta o panceta
1 Kg de Jamón
Aceitunas
500 gramos de Uvas pasas
Melaza
Procedimiento /Process
Luego se derrite la mantequilla o manteca y se deja enfriar, una vez fria se mezcla con la leche, 3 huevos revueltos, la sal y el resto de la azucar.
Esta última mezcla se une con la levadura activada y luego se le va agregando progresivamente a la harina amasandola constantemente hasta lograr la consistencia lisa y que no se pegue a las manos.
First the yeast must be activated, for this purpose the cup of water is lukewarm, then a spoonful of sugar and the yeast is added. Mix it with a whisk and let it ferment for 30 minutes or one hour depending on the room temperature.Then melt the butter or lard and let it cool down, once it is cold mix it with the milk, 3 scrambled eggs, the salt and the rest of the sugar.
This last mixture is joined with the activated yeast and then added progressively to the flour, kneading it constantly until it reaches a smooth consistency and does not stick to the hands.
It is then covered very well and placed in a warm place for 1 or 2 hours until it doubles in size
Seguidamente se empieza a estirar con un rodillo sobre una mesa previamente harinada.
Then we proceed to divide it into as many parts as the number of loaves we wish to make.Then we start stretching with a roller on a table previously flourished.
Luego se realiza el enrollado del pan, dejando siempre para la parte de abajo el ultimo pliegue.
Then we proceed to stuff, with the ham the bacon, olives and sultanas.Then the bread is rolled up, always leaving the last fold for the bottom.
It is then decorated with the same dough and left to rest for another hour. Finally it is put in the oven at 180° for a total of 25 minutes, but 10 minutes after being in the oven it is painted with a brush with an egg.
