Moi moi
Hello friends, how are you doing today, hope your day went well, mine was quite awesome but dramatic.
Today I decided to do moi-moi a Nigeria traditional delicacy at home by myself actually it came out fine but after learning from my mistakes. First of all I will share the ingredients with us and also tell us the process in making the delicacy.

INGREDIENTS

  • Beans
  • Fresh Pepper and tatashi
  • Crayfish
  • Onions
  • Vegetable oil
  • Seasoning cubes
  • Salt
  • Egg
  • Fish

THE PROCESS WITH PICTURES

IMG_20210506_064639_593.jpg
4 cups of beans
When you bring out your beans, now you make sure you pick them very well, to pick out chaff
and stones , after picking out the unwanted particles now you sprinkle water on it then starts smashing it with your hands, you keep doing this process until the pills and the dark-head is off. With the illustration below

Well-peeled
Now you are good to go so for me, I like to soak them for some hours, if possible overnight.

Soaked beans
I allow it to soak for a long time because I don't go to the Miller, I will blend the beans at home with the blender, so to get a smooth paste I have to allow it to soak for a period of time to get softened.
Once I'm satisfied I start with the process like I said earlier about the ingredients the pepper the onions the crayfish and so on I blend them all together, because the beans is much and I am making use of blender, I blend bit by bit.
With the pictures below you will be able to see the ingredients used.

Now I want to start blending but first of all you make sure you wash your paper, everything thoroughly.

Before blending

After blending
So this is what you get after blending your beans, pepper, onions, crayfish.
Now for me to get this colour of this beans paste, I added tatashi pepper(long in nature).
Now after I'm done blending it, I pour it into a big container there you start adding your seasoning cubes, salt and a little vegetable oil
You can taste it to see if everything is fine, I mean if the ingredients is aligning, the taste is delicious,so you taste it and find out what is lacking in it.
Now you are meant to cook the eggs earlier, peel and keep them aside, steam the fish very well with good seasoning.

The fish
So once everything is ok you start dishing them out, you can use your nylons, foils , plates or moi moi leaf.

I made use of plates, that is what I have at the moment, before I proceed I will like to share the mistakes made at first attempt.

THE MISTAKE BEGINNERS DO AT THE FIRST ATTEMPT.

After dishing out the beans into the plates, now you get your pot ready, look out for a sac bag or plantain leaf and lay it under the pot , to avoid your plates not to stick or get burnt, so today my mine got burnt, because of so many distractions I forgot to put the sack under before adding the plates on it, I quickly have to readjust my pattern I placed the sac bag and then continue with the cooking. So once you're done with the putting of sack bag or plantain leaf now you are free to put your plates in the pot. Put them in order.
And cook untill it becomes well cooked and in solid form. Just like mine in the pictures below

This is how it should look like, or better than this.
