Hi everyone!

  • I am very excited about this week's traditional food contest. Since it is an opportunity to promote Vietnamese cuisine as well as be curious about the foods of other countries. As you know that traditional foods are dishes, drinks, or deserts, which reflect the history, culture, and society of locals, and represent each country. Traditional foods have been passed down through families and communities in the past generations and lasted for now. Therefore, each country's traditional food has special flavors and makes a colorful picture of world cuisine.

  • Like others, I am very proud of Vietnamese traditional cuisine, because Vietnam is one of the culinary paradises of Asia with diverse dishes such as "nem rán" (Spring roll), "Phở" (Rice noodle soup) in the northern region, "bún bò Huế"( Hue beef rice noodle) in the central, or "bánh xèo" in the southern region. I can spend hours writing about my country's traditional cuisine but in the scope of this contest, let me show you the way to cook a Spring roll dish that originated in Hanoi, the capital of Vietnam, and is one of the most popular traditional Vietnamese food. In Hanoi, Spring roll is served anywhere such as restaurants, local markets, on the streets, or daily meal of locals.

  • Spring roll is just a fancy name since the dish has nothing to do with spring. The main ingredients of a roll of “Nem ran” are ground meat, mushrooms, and vegetables such as carrots and onion, rolled up in a sheet of moist rice paper. The most commonly used meat is pork, but one can also use crab, shrimp, sometimes snails (in northern Vietnam). Spring roll is famous not only in the country but also abroad, especially after US Ex-President Barack Obama and celebrity chef Anthony Bourdain were pictured eating the dish together in Huong Lien restaurant in Hanoi. They fell in love "bun cha" dish. After this event, Huong Lien restaurant is called the Obama bun cha restaurant and anyone know it. When you have an occasion to visit Vietnam, please come to this restaurant at the address 24 Le Van Huu street, Hai Ba Trung district, Hanoi capital to enjoy an Obama combo (a combo include grilled meat + Spring roll + 1 beer ) with $4 in price.

Huong Lien restaurant

Now let me show you how to cook Spring roll from pork:

  1. INGREDIENTS:

For filling:

  • Ground Pork: 500g
  • Vermicelli: 100g
  • Wood mushroom: 60g
  • Flavor mushroom: 40g
  • bean sprout: 150g
  • Carrot: 150g
  • Big Onion: 130g
  • Dried Onion: 2 pcs
  • Kohlrabi: 200g
  • Eggs: 2pcs
  • Seasoning: salt
  • Cooking oil: 0,5l

For the crust: Rice paper: 45 pcs.
For sauce:

  • Chili: 1 pcs
  • Garlic: 3 pcs
  • Sugar: 1 tbsp
  • vinegar: 1 tbsp
  • water: 5 tbsp
  • Fish sauce: 1 tbsp

2. HOW TO COOK:

  • Clean all of the ingredients
  • Soak wood mushroom, flavor mushroom, and Vermicelli in the water for about 10 minutes until smooth then cut them into small pieces.
  • Peel crust of carrot, onion, Kohlrabi then cut them ( see below photo)

  • Mix ingredients ground pork, eggs, wood mushroom, flavor mushroom, Vermicelli, carrot, onion, Kohlrabi, pepper together, then put seasoning.

The filling

  • Then warp spring roll: use 2 rice paper for 1 spring roll ( see photo below)

*Next step:deep-fried spring roll in cooking oil until the rice paper coat turns golden brown. You should dry 2 times to make the crust crispy.

MAKE SAUCE:

  • Peel garlic then put chili and garlic in the grinder then run
  • Mix all ingredients left of the sauce together, then put garlic, chili. Next,
    you can add carrot and Kohlrabi ( or not)
    A good sauce is a balance of sour, spice, salt, and sweet taste.

Finally, we garnish the Spring roll dish. This dish served with rice noodles, sauce, and herbs. The combination of Spring roll, sauce, herbs, and fresh rice noodle makes your meal perfectly.

Looks like lots of sugar in there.

@happydolphin: this sauce is balance of sour, spice, salt and sweet taste. It depend on the taste of ingredient using. For example if vinegar has a strong acidity, need more sugar. You can adjust recipe of sauce. With ingredients here, this recipe is suite my taste. Thank you for your comment!
