@giftto PROMOTING MY LOCAL TRADITIONAL BANGA SOUP. THE RECIPE.
Hi everyone. I'm Ese From Nigeria. This morning, I want to promote a local delicious African meal of my country, Niger Delta people of Nigeria. particularly the urhobo enthnic group of Delta State. We Popularly refer to it as Ogwho Ameidi. Banga soup is basically made with palm fruit, Otieko and logoje spices, and banga leaves called beletete. The urhobo people prefer to make it with tiko (jerky) It can also be prepared with fresh fish and chicken. I will start with listing out my ingredients with pictures.
INGREDIENTS
1 banga(palm nut fruit) 5 cups
2 Tiko ( jerky) 1kg
3 dried fish 500grams
4 dried Chilli, onions, and crayfish.
5 half tbs grinded otieko and logoje
METHOD OR PREPARATION
Step1 Wash banga thoroughly and put into a suitable pot, put it on medium heat with the pot cover and allow to cook for 40minutes.
After 40minutes, turn off your heat, pour your banga into a seive and pour into your mortar.
Step2 pound it till the palm fruits separate from the seeds and mash with your hand, add water little by little to prevent being too watery, and pour into your sieve already placed in the pot. Repeat this process 3times.
Step3 I put my Palm fruits juice on medium heat with the pot cover off and allow to boil for 30minutes to thickening it a bit.
Step4 I washed parboiled Tiko ( jerky) and pour into the boiling palm fruits juice and allow to cook for 15minutes, to let out the juice of the jerky.
Step5 after 15minutes, I added my washed dried fish and stirred gently.
Step6 I added grinded otieko and logoje ( banga Soup spices) and stirred.
Step7 I Added blended crayfish, chilli and onions, 2 Maggi Star stock cubes, half tbs salt and stir and allow to cook for 20minutes on low heat, till becomes thick.
After 20minutes my local banga soup is ready. I served in a soup bowl and took a picture with it. Banga Soup is mostly served with Starch, but can still be served with Eba or semovita.
Thanks for going through my recipe. Have a nice day.
