Chicken liver adobo
Adobo is the Spanish word for a marinade and it is considered a national way of cooking in the Philippines. Chicken liver adobo is often cooked by my family because it is cheaper but nutritious rich in Iron and Vitamin A and it strengthens our immune system.
This is how to cook a chicken liver adobo. We need ...
250 grams chicken liver
1 medium potato
1 medium onion
3 cloves garlic
2 small mandarin (you can use brown sugar)
2 tbsp vinegar
2 tbsp soy sauce
spring onion
chili powder, black pepper, salt to taste
Procedure
Chop the onion, garlic, spring onion, then the potato into cubes.
Add garlic, onion, chili powder, black pepper, vinegar, and mandarin (remove seeds) for marinade. Mix well.
Saute first the potato to prevent them from being mushy. Add salt to taste.
Add the marinade chicken liver. Stir then cover the pan.
When it starts to boil, add the spring onions and soy sauce. Stir well and cover. Put in medium heat or fire.
When the potato is tender, and marinade absorbs it is ready to serve.

In cooking adobo, you can use any meat that you prefer.
