Nigerian Egusi soup
Egusi ( blended) split in 2 batches ( one mixed with onions into a thick paste and one mixed with water but not too watery
Meat ( i used oxtail and cowleg)
Dry fish
Palm oil
Onions
Tomato blend ( tomatoes, onion, fresh pepper and red bell peppers)
Crayfish
Dry pepper (optional)
Washed Bitter leaves
Seasoning cubes
Small salt
Season and boil your meats and keep aside.
Blend tomatoes, onion, fresh pepper and red bell peppers and parboil to let water dry.
Dice onions and mix some with egusi into a paste with small water.
Warm palm oil but don’t let it bleach.
Fry onions and tomatoes blend till ready
Put mixed egusi with onions in small balls into the sauce , don’t stir so as not to scatter egusi.
Use a spoon to push egusi and sauce back and fort,
Add meat water, meat, crayfish, dry pepper , dry fish, seasoning cubes, salt and remaining egusi
Cover and let it boil so egusi can cook.
