How To Prepare "Ginisang Monggos" (Munggo Guisado with chicken meat)

Munggo Guisado

Hello steemit friends of @steemfoods community!

Today, I'm going to share with you my very own Filipino version of Munggo Guisado. "Ginisang monggos" as it is called in our Cebuano dialect is easy to prepare and of very low budget. A few cups of mung beans along with other ingredients would be enough to feed a family. You can have it any time of the day, but in my case I prefer it best if served during breakfast.

The way I prepare Munggo Guisado is very simple. I made it best with only a few but healthy ingredients. As always, my goal as a mother is to make my food tasty and delicious for my kids to eat.

Here are the ingredients I used in cooking Munggo Guisado:

1/4 kilo mung beans soaked in water overnight
3 cloves garlic, chopped
1 small onion, sliced
strings of spring onions, sliced
thumb-sized crushed ginger
1 cut squash "kalabasa", sliced
1 part chicken meat, chopped
3 cups water
1 piece of knorr chicken cube (optional)
salt and ground black pepper to taste
2 tablespoons cooking oil

The Cooking Process

Prepare all the ingredients

In a pot, place the mung beans that was soaked in water overnight to save a lot of cooking time.

Bring it to boil, until tender.
Then transfer to a separate container, and set a side.

Heat the cooking oil in a pan.
Saute the onion and garlic.

Once the onion becomes soft,
add the chopped chiken meat,
add the ginger,
continue to cook in medium heat until the chicken meat is cooked.

Put-in the mung beans,
add 3 cups of water,
stir, cover and let it boil.
Add more water only if necessary.

Add the sliced squash,
drop the chicken cube for a more savory flavor,
cover and continue cooking until squash is soft.

Once it boils, check the sliced squash if it is already soft,
check the taste, add salt according to your preference.
Sprinkle some ground black pepper,
and lastly, add the spring unions to add color to its flavor.

And we're done!!! Our Munggo Guisado is ready for serving.
Transfer to a serving bowl,
serve and enjoy!
