I am very glad to be participating in this great contest.
All thanks to the organizers of this wonderful contest.
I specially want to say a big thank you to @armstrongdiho and @bright-obias for introducing me to this platform.
And to the amazing @alikoc07 for his continuous support and impeccable judgements in contests.
I have enjoyed every moment in my short stay on this platform and i'm delighted to be celebrating this 5th anniversary hence i baked a cake with two flavours ( plain and red velvet).

Ingredients for Baking cake
Butter- 400g
sugar -500g
Egg -8pcs
1000g of flour
Cinamon powder -½ tablespoon
Banana syrup- 2 caps
Strawberry syrup- 2caps
Alcohol as preservative- 2 caps
Baking soda -1 teaspoon
Dry mixed fruit- 30g
Milk flavour- 20g
Baking powder- 1 teaspoon
Carbonate soda- 1teaspoon

Ingredients for making fondant
- Icing sugar....1000g
- Carbon menthyl cellulose(CMC). 1tablespoon
- Liquid glucose....3tablespoon
- Gelatin ...2caps
Procedure
Add the butter into a bowl
Add the sugar and stir in a clockwise direction using a spatula until it becomes fluffy.
Stirring may take up to an hour...this is how it looks when the butter and sugar has been properly mixed and is now creamy and fluffy.
Pour the eggs into the batter and stir.
This would be the outcome
In another bowl, add the dry ingredients which consists of the flour, cinnamon powder, milk flavour, baking powder, carbonate soda and mix properly.
Soak the dried mixed fruit in the alcohol and leave for 5mins
Add the dry ingredients to the batter and then add the mixed fruit and stir until it mixes very well.
Grease all corners of the pan using butter to avoid the cake sticking to the pan
Divide the mixture into two and in one part, add the red velvet flavour and thereafter pour into the pan.
Put the cake in the oven at 170°C and leave for 2hours 20mins to bake.
Now, the cake is ready and properly baked.
Procedure for icing the cake
I used fondant icing
To make the fondant, add the icing sugar and CMC into a bowl and stir.
In another bowl, add the liquid glucose, gelatin and hot water and stir properly. Therafter, pour into the icing sugar and mix until it becomes fluffy.
Spread the fondant using rolling pin.
Cut off the top of the cake to level it
Cover the cake using the fondant
Add your special designs and the cake is ready!
