ACHIEVEMENT 2: BITTER LEAF SOUP WTH COCOYAM (OFE ONUGBU)

Bitter leaf soup is common to the igbo tribe of Eastern Nigeria.Bitter leaf does not taste bitter in the slightest. The leave has to be properly washed to get rid of the bitterness before it is àdded to the soup

INGREDIENTS
1.Meat
2.palmoil
3.powered cocoyam
3.dry fish
4.pepper
5.prewinkle(Esam)
6.crayfish
7.maggi cubes
8.bitter leaf
9.salt to taste
You start by boiling your meats,when the meat are tender add the dryfish and prewinkles (Esam) add your maggi cube to it ,leave it cook .while the meat are boiling add little water to it allow it boil you can now add your dryfish ,crayfish then add your grounded or blended pepper. Stir it add palm oil leave it to thoroughly combine together for 7minutes turn the heat down low,you can now add the powered cocoyam be careful not to add too much cocoyam powder.The cocoyam will dissolve leave it for 5 minutes. Taste for seasoning and adjust if necessary add the washed bitter leave to cook for 2 minutes.
