Nigerian coconut rice recipe

Hey guys am back to share one of my recipes with everyone .

Nigeria coconut rice is simply cooking white rice in coconut milk.

First of all I went to the market to get some food stuff I don't have at home like beef and crayfish here are the pictures.

This is a small market in my area in bariga it's under construction for a new road actually.

Then I got peppers cause in Nigeria majority of us love our food spicy

INGREDIENTS:
-COCONUT(2)
-RICE(4 cups)
-BEEF
-SALT(a table spoon )
-PEPPER(7 scotch bonnet)
-VEGETABLES(CARROT,GREEN PEA AND GREEN BEANS)
-SEASONING CUBE(2)
-CRAY FISH

  • CURRY (a table spoon)
  • THYME(a table spoon)

Direction:
1.Get your coconut and break it like this

2.Grate your coconut and it's totally fine to add the coconut water together with it .
I used a grater while some may use blender actually just do what's fine for you .

3.i got a warm water to get my coconut milk with a little Siever to help extract the milk like I do my stuff bit by bit pardon me on that 😂

Then my coconut milk below I got quite enough

4.clean and cut your vegetables.

5.Wash and grate your pepper with the crayfish .you can do it separately but it taste different and much better when you blend it together trust me.

If you don't have a hand blender you can use an electronic blender but it must not be smooth to avoid changing the color..the mix should be rough shey o get lol.

6.Chop your onions

7.wash your beef

Add the onions

Add the seasoning cube

Add the salt

Add the curry(optional )
I used it because I was going for a rich stock but I did not add it to the main dish to avoid changing the color.

Add thyme

I added one scotch bonnet pepper for heat

Add a little water and bring everything to a boil for 20mins.

8.Transfer a good amount of vegetable oil to the frying pan and heat up for 2 mins.
9.add the boiled meat into the hot oil and fry till it's ready this should take like 8 minutes.

10.set aside the fried beef y'all.

11.Reduce the oil if it's alot to fry your vegetables mine was alot so to avoid soggy vegetable I had to cut it down

I added my onions to the oil
Then I added the vegetables

Do some seasoning to this dish will ya ? I added one seasoning cube ,a little salt, curry and thyme.
Add a little pepper from the one you grated (I know I say a little alot but a little goes a long way you know )

After a good stir leave to cook for 2mins max and set aside again a little for the dressing lol.
12.wash your rice till the water runs clean .

13.Put your pot on the gas cooker ,wait till the pot is dry .
I apologise I forgot to take the picture.
14.Add the washed rice into the pot together with your coconut milk

15.add the beef stock

16.add the remaining pepper mix we did .
17.Check for seasoning and another point to know when you are on track is when you taste it and it's super creamy and so sweet.
18.cover and leave till it's like ready I can't give a specific time because there are different rice actually but mine took 20mins.
19.When your rice is ready add the vegetables,I shredded some carrot and coconut to add extra flavour to the dish and set aside some for the dressing

20.Give it a good stir and that's it y'all your Nigerian coconut rice.

I love going into details and also try to capture every moment I spend cooking
