How I Made Sweet Fried Rice With Few Veggies | By @afunkycares
Hello, beautiful steemians. How's your week running? It's mid week already. Today, I will share with you how I prepared this fried rice with just few vegetables available.
INGREDIENTS
- Rice
- Carrot
- Green beans
- Green peas
- Spring Onions
- Green Pepper
- Onion
- Vegetable oil
- Curry and thyme
- Stock cubes and salt
PREPARATION
First, I prepared the vegetables.
- Scrap and dice the carrots ( that is, cut into small cubes)
- Remove the seeds of green pepper and dice
- Cut the green beans and spring
onions into small sized. - Dice the onions.

Green peas and cut green beans together in a bowl
I cut some ring onions to be used for garnishing.
- Then rinse thoroughly the diced carrot, green beans and green peas.
- Place all three together in boiling water or simply boil for 5 minutes . You can add some salt. Strain out and place under running water or in a bowl of cold water and sieve out. This preserves the vibrant colors of the vegetables. Set this aside.
- Rinse thoroughly the diced green pepper and spring onions. And set aside
COOKING THE RICE
Next, I parboiled the rice and keep In a sieve to drain out excess water.
Pour the parboiled rice into a clean pot,set on medium heat.
Add water to the level of the rice.(if you have beef or chicken stock,you can add first,then top with water to reach the level of the rice)
Add some curry, stock cubes and salt to taste. Stir in thoroughly till the curry is absorbed evenly.
Cover the rice and allow to cook till water dries up.
Our rice is almost ready.
NOW IS TIME FOR THE STIR- FRYING!
- Pour some vegetable oil in a hot pot.
- Once hot, add the sliced onions and stir
- Add the green pepper, stir.
Add the parboiled veggies (carrot,green beans and peas), stir.
Add a stock cube and little salt. Stir
- Allow to fry for 3-5 minutes.
Then divide the stir-fry veggies into two portions, leaving the first portion in the pot.
Then begin to scoop the cooked rice gradually into the veggies, stir and fry for few minutes.
- Alternate cooked rice with second portion of veggies until the whole rice is fried.
Finally add the spring onions and stir in.
Cover and allow to steam for 2 minutes.
Remove from heat.
Fried Rice Is Ready!!
Serve and enjoy!
Fried Rice can be enjoyed with grilled/fried chicken, turkey, fish barbeque, sauced beef etc . Can be served with chips/fries,salad, coleslaw , moin-moin , dodo etc. Anything you can enjoy it with.😋😋😋.
Fried rice is my favorite type of rice. Besides its delicious taste, it provides the body with nurishments from its varieties of Vegetable content.
Even when you don't have all the vegetables, you can always go ahead and cook your delicious fried rice with these basic few veggies.
