Pasta in Red Sauce

The taste of adequately cooked fusilli and tomato sauce is a heavenly match. From the tomato sauce to the onion and garlic, the black pepper, herbs, and bay leaves add their own unique taste, making this pasta in red sauce a never-ending experience.

(How to make Pasta in Red Sauce)

  • Preparation Time: 25 mins
  • Cooking Time: 15 mins * Total Time: 40 mins
  • For 2 quantities

Ingredients:

  • 1 1/2 cups cooked Fusili
  • 2 cups lightly boiled and finely chopped tomatoes
  • 2 tbsp olive oil
  • 2 bay leaves
  • 7 to 8 pepper
  • 1/2 cup finely chopped onions
  • 1 1/2 tsp finely chopped garlic
  • 1/2 cup finely chopped capsicum
  • salt to taste
  • 3 tbsp tomato puree
  • 1/2 cup tomato ketchup
  • 1 tsp dried oregano
  • 1 1/2 tsp dry red chilli flakes
  • 1/2 tsp sugar (optional)
  • 1/2 cup fresh cream

Method:

  1. Heat olive oil in a broad non-stick pan, add bay leaves and black pepper and sauté on a medium flame for 30 seconds.

  2. Add onion and garlic and sauté on a medium flame for 2 minutes.

  3. Add capsicum and sauté on a medium flame for another 1-2 minutes.

  4. Add the tomatoes and salt, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.

  5. Remove the bay leaves and discard them.

  6. Add the tomato puree, tomato ketchup, oregano, chili flakes and sugar, mix well and cook on a medium flame for 1 minute.

  7. Add the cream and mix well and cook on a medium flame for another 1-2 minutes, while stirring continuously.

  8. Add the fusilli and mix gently and cook on a medium flame for another 2 minutes, while stirring continuously.

  9. Serve immediately with garlic bread, garnished with fresh cream and cheese.
