Preparing a good meal to celebrate a special ocassion

Today we are celebrating end of course. I was happy because I didn't expect to do so well in my studies of Paleography, but I achieved a grade of 97%. As we couldn't go out to celebrate because of quarantine, we decide to cook at home and share a good meal.

We are asian food lover, so I decided to prepare this sweet and sour sauce to accompany fried chicken with chinese rice all made at home. This sauce is very easy to prepare and it is an excellent companion to fried chicken and pork. To make this sauce I don't use artificial colours because it doesn't need it.

Ingredients for the sauce:

  • 1 small cucumber
  • 1 carrot
  • 1 red pepper
  • 1 red onion
  • 1 white onion
  • 1 mango
  • 2 cups of water
    -1/2 cup sugar
  • 1/4 vinager

  • cut all the vegetables
  • boil the 2 cups of water together with the vinager
  • when the sirop forms, add the carrots and the mango and cook for 10 minutes
  • then add the rest of the vegetables and cook for 5 more minutes
  • it must be thick, cool to use

Ingredients for the chinese rice:

  • 6 cups of rice cooked al dente
  • 2 bunches of cibulet
  • 1 small carrot grated
  • fresh sprouts
  • soy sauce at taste
  • 1 tablespoon of sugar
  • 2 teaspoon of chinese salt
  • omelette made with 4 eggs and salt cut in pieces

Preparation:

  • fried the cibulet and the sprouts with 2 tablespoon of corn oil

  • add the cooked rice, the soy sauce, the sugar, the carrot and the chinese salt
  • mix well
  • add the omellette, cover and cook for 10 minutes at very low heat
  • adjust salt
  • put the sugar before adding the omelette

Ingredients for the fried chicken:

  • For 4 people I used 2 chicken breast so that it was enough for everyone, apart from the fact that it is too delicious and people want to have a second portion
  • 1 egg
  • salt
  • garlic powder
  • pepper
  • 200 grams of flour
  • 100 grams of corn flour
  • oil to fry

Preparation:

  • cut the chicken in small cubes
  • add salt, garlic and pepper
  • prepare the paste with both flours and a bit of salt and the egg
  • place the chicken cubes inside the paste and cover them
  • fry them in enough oil

  • fry the chicken cubes in enough oil
  • place in a basket with napkins to drain the oil
