Recetas de Tata: Torta de Uvas pasas y canela/Tata Recipes: Raisin and Cinnamon Cake
Today I present to you from my mother's recipe book, the "Raisin and Cinnamon Cake", a very soft and crunchy cake at the same time ideal to enjoy it with ice cream, hot chocolate or coffee with milk, it is up to each one of you to choose the companion.
Torta de uvas pasas y canela/Raisin and Cinnamon Cake
Ingredientes

2 cups of wheat flour 2 cups of brown sugar 4 eggs 1 1/2 cups of milk 1 tablespoon of baking powder 1 spoon of vanilla essence 90 grams of butter 1 cup of grape liqueur 100 grams of raisins 1 lemon
Preparación
Seguidamente se agrega la leche, esencia de vainilla, la rayadura de limón, el licor de uva.
Una vez que se tiene la mezcla de consistencia homogenea, se pasan las uvas pasas por harina de trigo, previamente se dejan remojar por 8 horas en licor para hidratarlas. Una vez que se pasan las uvas pasas por harina se añaden a la mezcla del bizcocho.
Se prepara la bandeja donde se cocinará en el horno, que debe precalentarse a 180°, se vierte la mezcla y se deja cocinar por 30-40 minutos o hasta que un palillo de madera salga limpio en el centro de la misma.
Preparation
In a bowl, first mix all the solid ingredients: the wheat flour, the baking powder and the brown sugar, then add the butter, always stirring constantly.Then add the milk, vanilla essence, lemon peel and grape liqueur.
Once the mixture has a homogeneous consistency, pass the raisins through wheat flour, previously soaking them for 8 hours in liquor to hydrate them. Once the raisins have been dipped in flour, they are added to the cake mixture.
Prepare the tray where it will be cooked in the oven, which must be preheated to 180°, pour the mixture and let it cook for 30-40 minutes or until a wooden stick comes out clean in the center of it.
