What a wonderful dish waakye is; we have something similar around here in Venezuela which we call "Palo a pique". We use rice and any kind of beans (usually black or red), and we add onions, sweet chilis, garlic, and herbs like parsley and cilantro. I don't think I've ever seen sodium leaves around here; I should certainly love to try them with beans.

Yes, for us the sodium leaves quality the food to be called waakye😂. This is because it gives it a totally different look.
But with the type of beans you use in Venezuela I am sure the Color or the beans will influence the dishes color and it will certainly look like waakye.
