Culinary Contest | Acehnese Red Cooked Chicken

Ayam Masak Merah is a typical Indonesian dish, especially Acehnese, which is very popular with all groups, from children to adults. This dish is very special because it is cooked with various spices and also uses free-range chicken.
This recipe is usually made when there are big celebrations such as weddings, the Prophet's birthday, Hari Raya, engagements, etc. OK friends, I will share recipes that will make your menu more varied.
Ingredients needed to make the "Red Cooked Chicken" recipe
Basic material;
Kampung Chicken, salt, lime and coconut
Category 1 spices;
- Garlic, shallots, curly chilies, small chilies, candlenuts, cumin and jara maneh, and grated coconut
Category 2 spices;
- Turmeric, red chili and roasted coconut (all ground)
Category 3 spices;
- Chopped shallots, curry leaves, pandan leaves, lemongrass, cinnamon and cardamom
How to make it;
- Grill the cleaned village chicken over low heat (make sure all the fine feathers are burned). Take and marinate the chicken that has been cut into pieces with salt and lime, let it sit for a moment.
- Grind all the spices in category 1 and don't forget to add water or vegetable oil to grind the spices.
- Take category 1 and 2 ingredients then stir evenly into the marinated chicken.
- Take a frying pan and heat oil to sauté all the ingredients in category 3 by adding the shallots first.
- After the aroma of the stir-fry comes out, add the chicken and stir-fry until the chilies are cooked and the spices are absorbed, then add the coconut milk little by little.
- Stir briefly and wait until the sauce has reduced slightly and the chicken is tender, don't forget to adjust the taste, if it's just right then you can turn off the stove. And ready to serve.
Indonesian tongues like spicy food, but you can adjust the level of spiciness to the amount of curly chilies. It will be even more delicious if eaten while warm and sprinkled with fried onions on top. Yummyyy... Good luck. 🥰
