I didn't have high hopes while cooking, but it ended up tasting amazing. It took just 20 minutes to make, which is great for busy schedules. It may appear basic, but don't judge a dish by its simplicity. The simplest recipes are often the most delicious.
While boiling the noodles, I separately steeped some mushrooms, green onions, and garlic (you can skip the garlic if you want), with black pepper and a bit of salt in a little water.
I steeped them for about ten minutes. I poured the noodles onto a plate, added the mushrooms, onions, and spices, and finally topped it off with some fresh chopped garlic and a bit of olive oil. Simple, pretty quick, and delicious!
The salad includes cherry tomatoes, arugula, spinach, radicchio, avocado, and a bit of olive oil.
