I am delighted to share one of my favorite local dish with this great community of like minds.
This dish is generally accepted by the masses in Nigeria and does not cost a lot to purchase it in my locality though many reckons its expensive.
Method and procedure of grilling bole fish
First off, the fish is cut into various sizes of choice, the fin remove all the innards (this is called gutting), the belly of the fish is also removed and washed with plenty of water to remove the blood in the fish and placed inside a sieve to drain the water in it.
After the above is done, the fish is marinated with dry-blended pepper, seasoning of choice, salt, the stew used in eating the dish and palm oil.
Then it is thoroughly mixed to ensure that proper marinade is done and then the fish is placed on the grill net for roasting with proper supervision and constant turning with two kitchen knives the fish will come out well grilled and palatable for consumption.
Method and procedure of grilling plantain
The plantain is peeled to remove the outer covering and then a line is drawn on the plantain for rapid grilling.
Furthermore, after the above is done I used palm oil to rub on the plantain to make it attractive and then I place it on the net grill for roasting.
when it is placed on the hot net grill, it is supervised constantly to get a good grill plantain that is not burnt.
Method and procedure of grilling yam and potatoes
The yam and potatoes are peeled and cut into different sizes and washed. after washing them they are put in a bowl and salt is sprinkled on them before they are placed on the net grill for roasting and supervised for better grill
Method and procedure of preparing bole sauce
I use pepper, onion, palm oil, and seasoning of choice to prepare it.
the pepper and onion are cleaned, washed thoroughly, and then blended after blending the pepper and onion I cook them till tender and then I add my choice seasoning and palm oil. then I serve with the roasted plantain, yam, potatoes, and fish.
Serving
The plantain, yam, and potatoes are cut into smaller sizes and dished on a plate and then the sauce is added to it alongside onion, the grilled fish, and Gongronema latifolium ( utazi leaf) which is effective in dealing with muscular conditions and fighting arthritis formations. Saponins and flavonoids, which are found in utazi, possess antioxidant properties and help to clear the human organism from toxins. Thus, consuming utazi leaves helps to improve overall well-being, that's why I add to my dish.
