Know Filipino Food: Ensaladang Talong

Ensaladang talong is grilled eggplant, once the skin is charred, we remove the skin and mash it but leave it to still have the stalk. Then we put minced tomatoes, onions and if available, we put green mangoes. We also put sliced salted egg. Others would put pickled papaya like in the picture. Some would even add shrimp paste. To add more taste to the mix. It's made to look like a salad and paired with meat dishes or pork dishes. It serves as a side dish or an appetizer. Usually, soury and salty foods enhance your appetite. It let's you eat a lot when you have this prior to your meals.
