Made some healthy blueberry Breakfast Donuts this morning. They are a healthy way ...

... to start your day with energy
All you need is :

100 g of Dates
100 g of white flour (when the dough is to sticky use more flour)
100 g of whole wheat flour
30 g ground almonds

1 big egg
some olive oil

300 g of blueberries
1 Tablespoon of Honey
3 Tablespoons Greek yoghurt
a little bit Himalayan salt
Water for boiling

Put the dates, the flour, the almonds and the egg in the kitchen aid and mix them.
Knead the dough for 2 minutes on a flour based ground and make 4 balls of it.
Make 4 little flat pieces and let them boil in some water in a pan. The water has to cover the top of the cookies to boil them for 5 minutes.
After 5 minutes put them out of the pan and dry them with some paper. Put them in a pan with some olive oil and fry them golden brown.
Add the blueberries and mix them with the donuts and let them cook a bit in the blueberry sauce.
Finally add/ top with the Greek yogurt and serve it on a plate. I didn't make a Donut form. Like you see in the picture, 4 little flat balls instead. For me is this form is better for cooking and when you mix all together you don't see a donut silhouette anymore 😁
You can try this with every other fruit you like and it’s a quickly prepared breakfast.
