Hi, This is Nirmalya alias @kingporos. I am from India. Today I making Chocolate Sandesh.

At first little history about the dish. Sandesh is a dessert, originating from the Bengal region of Indian subcontinent, created with milk and sugar. It is a specialty of the region, Bengal. Sandesh is basically made from Chhana or Paneer. Chhana is homemade Indian cottage cheese. In my recipe, I used homemade Chhana.

The recipe is in two parts! First making of Chhana then the Sandhesh using the Chhana.

Ingredients

  • 500ml Full Cream Cow Milk
  • 1.5tsp Coco Powder
  • 1.5tsp Sugar
  • 1tsp Vinegar

I used a Mortar and pestle to grind the sugar into powder.

Making of Chhana or Cottage Cheese

  • First I pour the milk into a pan and then turn the heat to high. I waited untill the milk to comes to a boil.

  • When the milk begins to boil I added 1tsp vinegar. The milk begins to curdle instantly. This separates the milk into cheese and water. This cheese is called the Chhana.

  • Drained the water by using a cotton cloth and put the cheese on a resting point for 30 minutes.

This brings us to the second part.

Making of Chocolate Sandesh

  • After 30 minutes of resting the cheese became firm. I put it on a plate.

  • Then added the powdered sugar and Coco powder.

  • Gently mixed until all the ingredients became a dough.

Mixture Dough

  • Put the dough into a pan and turn the heat medium. Stir it untill it became firm.

  • Made small doughs from the mixture and made a hole in the middle of the dough. Let it rest for 15 minutes.


Sandesh Dough

  • In between, I made Chocolate syrup using the leftover coco powder and powdered sugar. Then I put a little syrup on the middle of the Chocolate Sandesh dough.

  • Then rest it in a freezer for 10 minutes.

Voila! Chocolate Sandesh is ready.
