Introduction

The Pumpkin leaves, known as "nkong ubong" in ibibio tribe of the country Nigeria, are More a versatile and nutrient-rich ingredient leave used in various traditional dishes and across other tribes. One very iconic recipe that did showcases the vibrant flavors of the pumpkin leaves is the (Pumpkin Leaf Soup). Passed down here through generations to others, this very recipe is very easy to make and as well brings a taste of Nigeria to your table always. So therefore, In this write up, I will definitely share the step-by-step preparation of this pretty delicious soup, along side with some insights properly into the very cost of pumpkins in my country Nigeria.

[Pumpkin Leaf Soup]
Ingredients needed:

  • 1pretty bunch of fresh pumpkin leaves (nkong ubong)
  • 500-700g of assorted meat (either beef, goat meat, or chicken depending)
  • 2 cups or band of stockfish or dried fish base on appetizer
  • 1 cup of red palm oil
  • 1 onion big or medium, finely chopped to pieces
  • 2 tablespoons of ground crayfish or pounded
  • 3-5 seasoning cubes base on quantity
  • Salt to taste
  • Pepper to taste as well
  • And Water finally

Instructions;

  1. Properly Wash the fine pumpkin leaves thoroughly and chop them finely on a tray. Then Set aside.
  2. In your pot, cook(season )the pretty assorted meat with some chopped onions made, seasoning cubes too, pepper and salt until tender. Add water as needed in small quantity.
  3. Then Add your stockfish or dried fish to the pot you're using and continue cooking until it is soft and tender.
  4. Here In a separate pot, properly heat the palm oil on medium heat for sprayed. Therefore Add the remaining chopped onion and salt until it translucent.
  5. Carefully Stir in your ground crayfish and pepper, then you add the cooked meat and stockfish/dried fish and Mix well properly.
  6. You Pour in enough water here to cover the ingredients and bring to a boil at certain degree of heating.
  7. You therefore reduce the heat to a low volume and add the chopped pumpkin leaves to it. Simmer it for about 10 minutes until the leaves are cooked but still pretty retain their vibrant green color here.
  8. You Adjust the seasoning with salt and pepper to taste on and make to your taste.
  9. You can now Serve the Pumpkin Leaf Soup hot with your pretty favourite choice of swallow [e.g., the pounded yam, eba(garri), fufu and Rice 🍚].

Who taught you how to prepare it or how you learned to make it.

I definitely learned this very recipe from my humble mother, who deliberately passed on her culinary skills to me at tender age. She carefully taught me the importance of carefully selecting fresh and vibrant pumpkin leaves to so enhance the flavor of the soup as well as the look. Watching her closely when preparing this dish with love and care really inspired me to carry on the tradition and share it with others that come close to me.

Cost of Pumpkin in Nigeria;
In my country Nigeria, the very cost of pumpkins leave definitely varies depending on the size and season it is. On a average, a sorted medium-sized pumpkin (known as either "auyama" or "squash") can certainly range from N200 to N500 Nigerian Naira (NGN) precisely. However, it's so always best to check the current market prices to get the most accurate estimate and as well which season it is.
