Hello steemians and members of STEEM HEALTCARE community, my name is jer emiah and its my first time posting here. I also want to thank @ for making this contest.Am here today to tell and lecture you on how to prepare the best Nigerian vegetarian food (Melon soup).

A lot of people around the world don't even have the idea of what sweet and delicious dish they can make out of a melon laying on their gardens 🤨.

NIGERIAN EGUSI SOUP it's a soup thickened with ground melon seeds and other vegetables. It is one of the most popular soups prepared by most tribes in Nigeria with considerable variations and often eaten with pounded yam.

this recipe will teach you how to prepare the nigeria egusi soup.

INGREDIENTS

  • one cup blended onions about 3-5 with fresh chilies to taste.
  • 4 cups egusi melon grounded or milled.
  • 1/2 - one cup of palm oil
  • 2 teaspoons of fresh une iru, locust beans
  • salt to taste
  • ground crayfish to taste
  • 7-8 cups stock
  • cooked meat and fish quantity and variety should be according to taste.
  • 2 cups cut pumpkin leaves
  • 1 cup cut waterleaf
  • 3 tablespoon bitterleaf washed

INSTRUCTIONS
EGUSI PASTE.

  1. Prepare the egusi plate

  2. blend egusi seeds and onion mixture. Set aside.

MAKE THE SOUP

  1. In a large pot, heat the palm oil on medium for a minute and add the locust beans.

  2. Slowly add the stock and set on low heat to simmer.

  3. Scoop teaspoon size balls of the egusi paste mixture into the stock . Be sure to keep ball shape.

  4. Leave to simmer for 20 - 30 minutes so the balls get cooked through.

  5. Add the fish and meat and other bits u eish to add.

  6. Add cut-up pumpkin leaves

  7. Add waterleaf.

  8. Stir and put a lid on the pot and allow cook for 7 - 10 minutes, till the leaves wilt.

  9. Add the bitterleaf, leave the lid off while the cooking finishes for another 5 - 10 minutes.

  10. Stir, check seasoning and adjust accordingly.

  11. Now you can sit back and enjoy your sweet, delicious Nigerian egusi soup😋😛.

The perfect swallow ( paste) to eat with this soup is pounded yam. you can also reserve it with cassava flour, semolina.
