In today’s contest, I’d like to share with you how to prepare editan soup. Editan soup is one soup I have come to like more than any other soup. I think it has to do with the nutritional benefits it carries.

This soup is mostly known in the southern part of Nigeria, especially by Akwa Ibom people. Although many still think afang is the best, I prefer editan to afang.

People have their preferences though.

First things first, I got my ingredients ready.

The vegetables were cut. My editan is always pounded, but on very few occasions, I grind it in the market. Reason being that my grandmother said pounding would make my soup thicker, and I like my soup thick.

Ingredients
  • Crayfish
  • Maggi
  • Pepper
  • Periwinkle
  • Cow skin
  • Beef
  • Stockfish
  • Palm oil

These are my ingredients, but you can decide to add more if you want to.

After my editan was pounded, I boiled some water to wash it. Editan is usually bitter, this is one of the reasons that make elderly people like it.

When I was done washing it, I put it aside to begin the main cooking.

When washing the editan, I poured the editan into a cloth-like filter to wash out the bitterness, not all of it though.

Beef, cowskin and stockfish

I had my stockfish, cowskin, beef, and periwinkle in the pot for steaming. When it was properly cooked, I poured in my water leafs and put some oil in it. After that, I covered my pot and allowed it for a few minutes.

How much do you like periwinkle?

After a few minutes, I poured in the quantity of water I was going to use to cook the soup. Also, I added my ingredients to stir.

Time to eat

When everything heated up, I poured in my editan and stirred. This was the end of it. I always like my soup green(ish), so once I stirred it, I brought it down from the fire.

I was going to have this with garri. Now I made my garri to enjoy with the soup.

I do. And there's actually oil in it, but not enough.
It's because my parents, especially my grandmother doesn't like it that much.
