FOOD CHALLENGE CONTEST WEEK #105| Spinach and Potato Curry!

This is Sikha from India hope you people are enjoying the season of contest due to upcoming festivals of Ram Navmi and Holi me and my families totally busy for the preparation so I am not getting sufficient time being active all the time.

I am here with my recipe of spinach and potato
Curry.

For the recipe the main ingredients we need are chopped spinach, pieces of potato and the rest ingredients are as follows as:

Ingredients


•2 finely chopped onion
• 4 tomatoes finely chopped
• pinch of cumin
• 1 tbsp mustard oil
• 2 tbsp onion garlic paste
• pinch of turmeric
• chillies according to preference
• 1 tbsp cumin and coriander powder.
(chopped vegetables)


Steps for preparing the curry :

Step 1

Wash all the vegetables with clean water and chop them well.

Take a pan and heat some mustard oil pour a pinch of cumin seeds and a chopped chilly let them pop in the oil until the turns golden brown.

Next add the chopped onions and fry them for a minute then add all the chopped potatoes and fry them until they turns brown.

Step 2

Once the potato turns brown add the chopped tomatoes and cover the vegetables with the lead after adding salt to it.

Once all the vegetables are half ripped add the ginger and garlic paste and the spices mentioned above like turmeric powder, coriander powder and cumin powder and stir fry them well.

Step 3

In the last step add a cup of water or according to your preference if you want much gravy or semi dry and then cover the vegetables with the lead for about 10 to 15 minutes and let all the vegetables absorb the spices properly.

Garnish it with some coriander leaves and your spinach and potato curry is ready to be served.

This curry can be eaten with bread rice chapati aur paratha and indeed it is very healthy for eyes as spinach has lot of iron in it.
